Meet the first female Toji in Okayama

On the last day of the Okayama tour on Jan. 31, meet the fascinating young duo, sister and brother team who run their family brewery, Tsuji Honten (since 1804) in Katsuyama, Okayama. Souichi Tsuji runs the company while his sister, Maiko, brews sake. To be precise, Maiko Tsuji is the toji, master brewer, of the brewery and she is the only female toji in Okayama. Even today’s modern sake brewing world, there are only a few handful woman toji.
